Occasionally food for the soul.
But today, I write of food for nourishment.
Having moved back into my house, I now have use of a kitchen. Which now allows me to make use of my Pinterest board. So in my time home I have decided to compile a list of tried and true recipes, which involves trying some! So here are my most recent kitchen adventures...
Italian Wonderpot:
I absolutely love this! Pictured is when I made it with GF (gluten-free) pasta at my house. But I also made it when I was at Jake's house over New Year's. I loved it so much there that I came back and made it with him again for my whole family! Highly reccomend it...

Quinoa Mac & Cheese:
I have to admit, being GF is not my favorite thing. Espeically when I want some comfort type food. So when I came accross this recepie I was elated and hopeful. I just needed it to be amazing! And let me tell you, it did not disappoint.
I shared this delicious meal with a friend, and we both loved it.
Okay I admit, I basically doubled the cheese by adding mozzerella.
But it was so worth it!

Honey Mustard Chicken Strips:Dinner fell upon me one night, and I was given a pound of raw chicken and a time to have dinner by. So of course I looked up chicken on Pinterest and decided this would be the best option. I replaced the bread crumbs with a homemade GF option. I used a grits and italian seasoning mix. If I did it again I would grind the grits up more before breading the chicken.
The home made honey mustard was delicious! A little sweet for my taste, I might add a little cayenne pepper next time.

Chicken Quinoa Soup:
This soup came about on a cold day. The snow was piling up, the family was stuck inside, and I had leftover chicken that I hadn't used for chicken strips. So I found a soup that would be filling, warm, and use up the leftover chicken. It was just a bonus that it tasted good too! The only thing I did differently was to simmer the quinoa in a pan with some olive oil before putting it in the pot. It gives it a little bit of a nuttier flavor, and I think it adds to the soup!
